Mediterranean Chicken Salad Recipe

A warm, light and very healthy salad, it is the Mediterranean salad with chicken, a mixture of roasted vegetables and grilled chicken, perfect to include in any diet to lose weight.

Ingredients to make Mediterranean Chicken Salad:

  • ½ unit of Eggplant
  • ½ unit of yellow zucchini
  • ½ unit of green Zucchini
  • ½ unit of chicken breast
  • 1 garlic clove
  • 1 handful of black olives
  • 1 jet of olive oil
  • 1 pinch of salt and pepper

How to make Mediterranean Chicken Salad:

Before making this recipe with roasted vegetables and chicken, the first step is to get all the ingredients ready.

Cut the aborigine into half-moons, sprinkle a pinch of salt and leave it to act for 15 minutes. We do this in order to bleed them and remove the bitter taste they have. After this time wash the aborigines and dry with absorbent paper.

Cut the corvettes into 2 cm thick slices, season with salt and pepper and cover with olive oil.

Bring the aborigine previously covered with olive oil and the corvettes to a hot grill. Cook for 4 minutes on both sides until all the vegetables are roasted.

Separately, in a frying pan with oil over medium heat, cook the previously seasoned chicken breast fillet. When it is golden on both sides, add the finely chopped garlic clove and cook for another minute.

Finally, serve the vegetables, on top of them some chicken strips and finally, cover with black olives.
