Meatballs with rice recipe

Ingredients to make meatballs with rice:

  • 400 grams of ground beef
  • ½ piece of onion finely chopped
  • 100 grams of seasoned tomato puree
  • chipotle chili to taste
  • salt to taste
  • pepper to taste
  • 1 egg
  • 1 cup of chicken broth
  • 1 cup of water (240 milliliters)
  • 1 cup of vegetables of your choice
  • 100 grams of cream cheese type Philadelphia (optional)

How to make Meatballs with Rice:

  1. To get started with this meatballs with rice and vegetables recipe, simply cook 1/2 cup of rice with 3/4 cup of water.
  2. Move constantly so that the rice does not stick, let cook for 10 minutes or until the water has been consumed.
  3. Tip: you can also reuse rice from a day before.
  4. Put the tomato puree in the blender and blend together with the chipotle pepper to taste with 1 cup of water.
  5. Tip: if you don’t want to use packaged tomato puree, you can blend 3 tomatoes with a clove of garlic.
  6. In an empty pot what you liquefied, season with a little salt to taste. Add a cup of chicken broth or chicken bouillon powder, let cook for 5 minutes.
  7. In a container place the ground meat, add the previously chopped onion, a little salt and pepper, the rice that you cooked and an egg.
  8. Mix all the ingredients until they are integrated and a smooth and manageable consistency is left.
  9. Then, form the meatballs of the size you prefer, fill with a little cream cheese, close and finish shaping.
  10. While the tomato sauce with chipotle is boiling, add the meatballs so that they cook with the sauce. She lets everything cook for 10 minutes.
  11. Tip: if you prefer, you can fry the meatballs first and add the sauce at the end.
  12. Finally, add a mixture of vegetables of your choice and cook over medium heat for 5 more minutes.
  13. You can use the vegetables that you like the most, if you do not want to use canned, you can cook the vegetables raw and also add them at the end.
  14.  In this case, we have used corn, carrots, peas, and you can also add potatoes, courgettes, aubergines or any vegetable you have at home.
  15. Serve your meatballs with rice in broth and enjoy! We recommend accompanying it with beans and a corn tortilla, but you can do it with whatever you like the most. To eat!
