Meat skewers with rice recipe

Ingredients to make Skewers of meat with rice:

For 4 people:

  • 3/4 kilo of beef tenderloin.
  • 1 red pepper.
  • 1 green pepper.
  • 12 dwarf tomatoes.
  • 12 stems of tender garlic.
  • 200 g of rice cooked in water with oil and salt.

Marinade:

  • 1/4 liter of oil
  • 2 cloves of garlic
  • 1 bunch of aromatic herbs (thyme, bay leaf, parsley)
  • l lemon
  • Grated nutmeg
  • Salt

How to make meat skewers with rice:

We cut the meat into regular cubes and put it in a deep dish. Grease with the olive oil, the crushed garlic cloves, and the bunch of aromatic herbs, salt, pepper and grated nutmeg.

Store the meat in the refrigerator and let marinate for at least 8 hours, turning it from time to time so that it is well impregnated with the seasoning. Wash the peppers, dry, cut in half lengthwise, place on a baking tray, paint with oil and roast for 30 minutes. Peel the peppers and remove the seeds. Clean the garlic sprouts and cut into 3-4 centimeter pieces. Cut the peppers into squares. Wash and dry the dwarf tomatoes. Drain the meat and mount the skewers alternating with garlic sprouts, peppers and tomatoes. Turn on the oven grill and arrange the skewers on a rack placed on the oven tray. Place under the grill and roast for 3-4 minutes on each side. We accompany with a white rice as a garnish.
