- 1 pinch of salt
- 18 guerilla chilies
- 1½ tablespoons oregano powder
- ½ tablespoon cumin powder
- 3 liters of water
- 2½ tablespoons of butter
- 2 tablespoons of wheat flour
How to make Meat with red chili:

To start, place the beef in the boiling water, along with the diced potatoes. Add a pinch of salt, the bay leaves, and a piece of onion and two cloves of garlic. Once the meat is cooked, remove it from the water and let it cool. Shred it and reserve it next to the potato.

Meanwhile, place the guerilla chills in a little hot water, leaving them to stand until they soften. When they are soft, open them, remove the veins and seeds.

Once the chills are ready, put them in the blender or processor along with the garlic, cumin, oregano and a pinch of salt. Also add the rest of the onion and a little water. Blend until you get a homogeneous mixture, strain it and reserve it.

On the other hand, heat the butter in a saucepan until it melts. When it is liquid, add the flour and keep stirring until you get a light brown mixture.

Add the guerilla colada sauce to the butter and flour mixture. Integrate the ingredients, add the rest of the water and stir constantly. Check the seasoning and, if necessary, add a pinch more salt.

Finally, the shredded meat and the cubed potatoes are added, the ingredients are left to integrate for 10 more minutes and without stopping stirring.
