Ingredients to make Meat Cubes:
- 4 kg beef bones
- 3 onion(s) cut into cubes
- 3 carrot(s) cut into cubes
- 3 celery stalk(s), diced
- sliced mushrooms to taste
- Tomato sauce
- 1 cup(s) red wine
- Laurel rosemary or thyme to taste and choice
How to make Meat Cubes:
- (This is not a recipe for food as such, but to season them and avoid buying the traditional “caluga de caldo”). Brown all the vegetables in a hot oven. Then put in a pot and add tomato sauce, red wine and the herbs of your choice; cover with water, cook until all vegetables are cooked. Immediately strain it and boil the broth obtained until reduced by half. Let cool and put them in trays and freeze. Once frozen, it is suggested to unmold the meat cubes and store them in a source or airtight bag.
