Mayonnaise Soup Recipe

Mayonnaise soup, also known as gazpachuelo, is a typical recipe from Malaga in Spain. It is a hot seafood soup made from fish and mayonnaise.

The version that Angela Osal brings us is a variation of the original recipe that is delicious, so if you want to try a different and original soup with fish, you cannot stop preparing this curious mayonnaise soup.

Ingredients to make mayonnaise soup:

  • 150 grams of shrimp or tiger prawns
  • 150 grams of Clams
  • 100 grams of Monkfish or other hard fish
  • 1 medium cooked potato
  • 5 tablespoons of mayonnaise
  • 1 liter of fish broth

How to make Mayonnaise Soup:

  • Pour part of the broth into a saucepan over the heat and when it starts to boil, add the shrimp. Let them come to a boil, apart from the heat, strain the broth and reserve it. Also peel the shrimp and reserve them.

  • On the other hand, open the clams in a container with part of the remaining broth. Pass this broth through a fine strainer and add it to the one after cooking the shrimp. Repeat the same procedure with the monkfish, reserving the cooking broth and adding it to the previous one. Shred the fish and reserve.
  • The idea is to cook each shellfish separately, always using the broth, and then mix it all together with the fish.
  • Put the mayonnaise in a tureen or salad bowl and pour, little by little, the broth that we have from the previous preparations.
  • Add the broth without stopping to move until everything is well linked. Then add the shrimp, chopped cooked potato, clams, and fish.
