Matanzas rice recipe

Ingredients to make slaughter rice:

  • free range chicken
  • pork rib
  • Lean
  • Onion
  • Red pepper
  • Chopped garlic
  • 1 tomato
  • 1 teaspoon sweet paprika
  • Saffron
  • Rice
  • mushrooms

How to make slaughter rice:

  1. In a wide and slightly high saucepan I fry free-range chicken, lean meat and pork rib. Once I add onion and finely chopped red pepper, one chopped garlic and one grated tomato.
  2. When everything is well fried, I add a teaspoon of sweet paprika, stir everything well and cover everything with water
  3. Let it boil for 1|2 hr., over moderate heat, add a little saffron and then add the rice that should boil for about 12 minutes.
  4. We usually make this rice in the mushroom season, that is, around October, so when the rice is boiling we also add chopped mushrooms.
  5. The rice should not be dry or very soupy. It is very, very good and if you eat it when it has rested for a few minutes it is scrumptious.
