Mashi is a traditional Egyptian cuisine recipe that consists of a rice dish with meat, spices, and nuts. As this is a vegan recipe without ingredients of animal origin that I share, we are going to replace the meat with seitan, an excellent source of vegetable protein, whose texture is very similar to that of meat. Egyptian mashi or rice is a very simple, delicious and healthy dish, full of tradition and history that will surprise you with its aromas and textures.
Ingredients to make Mashi or Egyptian rice:
- 300 grams of basmati rice
- 150 grams of seitan
- 2 tablespoons of pine nuts
- 2 tablespoons of pistachios
- 2 tablespoons of crushed almonds
- 1 teaspoon of cinnamon
- 1 teaspoon of nutmeg
- 1 splash of olive oil
- 1 teaspoon salt
- 1 pinch of black pepper
- 600 milliliters of water (2½ cups)
How to make Mashi or Egyptian Rice:
- Heat a frying pan with a splash of oil and toast the nuts: pine nuts, pistachios and crushed almonds. Stir from time to time so they don’t burn.
- When the nuts are browned, remove them from the pan and place them on absorbent paper to remove excess oil.
- Cut the seitan into small cubes and sauté them in the same pan for 4-5 minutes.
- Add the cinnamon, nutmeg, salt and pepper.
- Stir well and add the water.
- Bring the water to a boil and add the rice.
- Cover the pan and let it cook over medium-low heat until the water evaporates and the rice is ready.
- Add the nuts to the rice, stir and serve.
