Mashed potatoes with mushrooms recipe

The potato is a wild card in the kitchen, since everyone likes it and it is cheap; since in the times we are in it is to be appreciated. For our mashed potatoes with mushrooms we are not going to take more than 25 minutes to prepare. A very easy recipe to prepare.

Ingredients to make Mushroom Mashed Potatoes:

  • 400 grams of Potato
  • 100 milliliters of evaporated milk
  • 25 grams of Butter
  • 400 grams of Mushrooms
  • 4 eggs
  • 2 branches of parsley
  • 1 splash of olive oil
  • 1 pinch of Salt and Pepper

How to make Mushroom Mashed Potatoes:

  1. We start with the puree. To do this, we wash the potatoes and cook them in a saucepan with salted water for approximately 40 minutes or until we see that they are soft.
  2. Once they are all cooked, we drain them, peel them and we can crush them or pass them through the purée mill.
  3. Later we added the butter, evaporated milk, salt and pepper. We mix everything until we obtain a homogeneous puree. Once finished, we keep it warm using a water bath.
  4. Tip: The cooking time depends on the size of the potato, one way to know if it is cooked is by piercing the center with a knife, so you will notice if it is tender.
  5. Separately, we take the parsley and chop it; we pass it through the blender with 40 ml. of oil and reserve it for later.
  6. We clean the mushrooms, removing all the dirt very well. We wash them, dry them and cut them into thin sheets, we sauté them in a frying pan with a few drops of oil for approximately 8 minutes. Once removed from the heat, season them.
  7. Now we go with the eggs We put a little oil in a frying pan and heat it up to be able to cook the grilled eggs.
  8. Make them one by one and leave them until the white is curdled, adding drops of oil if necessary. We remove them with a slotted spoon to season to taste.
  9. To assemble the dish, we distributed the mashed potatoes that we had prepared in plates, added the mushrooms and watered with the mixture of oil and parsley that we had previously beaten.
  10. Place the eggs on top and, as a professional chef’s last touch, add a leaf of washed and dried parsley.
  11. This dish of mashed potatoes with mushrooms can be served as a side dish, a main dish or eaten at dinner time.
