Marinated Partridge Salad Recipe

Ingredients to make Pickled Partridge Salad:

  • 3 onions
  • 2 carrots
  • Black peppercorns
  • Garlic, a few cloves
  • 2 bay leaves
  • Olive oil
  • Salt
  • Vinegar
  • Toilet
  • 1 tablespoon ground paprika

How to make Pickled Partridge Salad:

In a saucepan put the oil, the onion cut into slices, and the carrot into slices. We spice with the bay leaf, pepper, garlic, sauté and add a glass of vinegar and a glass of water.

Let cook for a quarter of an hour. At the end we put in paprika.

Separately, we fry the partridges that we have previously passed through flour and add them to the marinade casserole. Cook for a few more minutes and let cool.

Now we take different types of lettuce (if we have them), or any other type of lettuce and prepare some leaves, place them on the plate, make melon balls and some orange segments and put aside the cut pickled partridge, and dress with an old-fashioned mustard-based vinaigrette.

We can put some poppy seeds to give a touch of contrast on top of the fruit.
