Marinated Palometa Recipe

Ingredients to make Palometa in adobo:

  • ¼ kilogram of flour
  • 1 pound of Oil (fry)
  • 1 pinch of white pepper
  • 1 tablespoon of vinegar
  • 1 bay leaf
  • 1 kilogram of Palometa in fillets
  • 2 garlic cloves
  • 1 pinch of salt
  • 2 units of peppercorns

How to make Palometa in adobo:

  1. Put the chopped pomfret in a clay pot. Prepare the marinade; mix two tablespoons of water, very finely chopped garlic, black pepper, bay leaf, oregano, vinare and salt. Pour over the casserole with the pomfret and leave to marinate for four hours.
  2. After this time, drain and dry with kitchen paper. Pass through flour and fry with plenty of hot oil.
  3. Serve freshly made accompanied by a mayonnaise sauce made with a pinch of garlic.
