Marinated cod skewers recipe

Cod is a very tasty white fish and has a low fat content. In this recipe we have marinated it with a traditional marinade based on vinegar, paprika and garlic to enhance its flavor and make a unique dish. If you enjoy preparing fun dishes, you will surely love these marinated cod skewers.

Ingredients to make Marinated Cod Skewers:

  • 200 grams of desalted cod
  • ½ dessert spoon of ground cumin
  • ½ dessert spoon of sweet paprika
  • 2 bay leaves
  • 2 cloves of garlic
  • 1 piece of ground black pepper
  • ½ glass of white wine vinegar
  • ½ glass of water
  • 1 jet of olive oil
  • 1 handful of fresh oregano
  • 12 cherry tomatoes

How to make Marinated Cod Skewers:

We gather all the ingredients to prepare the marinated cod skewers. Dice the cod and place it in a bowl with the peeled garlic and bay leaves. It is not necessary to add salt to this cod because we have bought it to the point of salt, everything will depend on the type of cod that you use. Season with ground cumin, paprika, a little black pepper and fresh oregano.  If you don’t have fresh oregano you can use it dry. Add the vinegar and water, and cover with transparent paper to finish the process of marinating the cod. Let it macerate in the fridge for 45 minutes to 1 hour. Once macerated, drain the cod and fry it with a little olive oil. It is good that it drains well so that the oil does not jump when we cook the fish.

Drain the cod on a plate with absorbent paper to remove excess oil and let it cool down. Assemble the marinated cod skewers interspersing pieces of cod with cherry tomatoes. You can also combine these fish skewers with some oven-roasted peppers. These marinated cod skewers can be incorporated into a summer menu that includes salmorejo and a Tinto de Verano with white wine. We hope you like it!
