Ingredients to make Gachas Manchegas:
- 2 tablespoons of almorta flour
- 3 glasses of water
- 2 pinches of salt
- 3 garlic cloves
- 1 dessert spoon of paprika from the vera or smoked
- 3 tablespoons of extra virgin olive oil
- 1 piece of fresh chorizo
- 1 piece of fresh bacon
- 1 pinch of ground white pepper
- 1 dessert spoon of cumin
How to make Manchego Porridge:
- Peel the garlic cloves and cut them to fry them in a pan with oil. When 3 minutes have passed, add the bacon and chorizo cut into pieces, fry them for two minutes, remove everything and reserve.
- In the same pan add the pea flour and stir while cooking for another couple of minutes. On the other hand, heat the water for a minute in the microwave.
- Tip: Keep an eye on cooking to ensure that the flour does not burn.
- Slowly pour in the warm water while stirring the flour to dissolve it. It will be smooth and will slowly thicken until it acquires a texture similar to that of a thick puree. Remember that it will always thicken more once it cools down.
- Add the paprika and continue stirring over low heat, avoiding burning. If you need more water because it is very thick, do not hesitate to add it.
- Add the cumin and pepper, continue stirring and cooking for 7 minutes.
- Tip: Keep stirring to prevent sticking.
- Once you have the porridge finished, do not let it cool and serve immediately accompanied by the bacon, garlic and chorizo sauce. Do not forget to accompany your Manchego porridge with bread, as it is very important to wet it and enjoy the dish.
- Tip: Do not let it cool too much, as it solidifies quickly.
