Ingredients to make Manchego Migas:
For 4 people:
- 600 grams of bread sitting the day before
- 1/4 liter of olive oil
- 200 grams smoked bacon strips
- 3 garlic cloves
- 1 red bell pepper
How to make Manchego crumbs:
Cut the bread into cubes, soak them in water and salt, wrap them in a large white cloth and leave them to rest for at least 2 hours or from the day before in the lower part of the refrigerator. Heat a little oil and fry the chopped pepper, remove it and, in the same fat, fry the peeled and chopped garlic cloves and the smoked bacon cut into strips. Add more oil, if necessary, and add the crumbs, stirring so they don’t stick together. They should be loose and golden. Finally add the pepper and serve. Fresh, green grapes are a good accompaniment to the migas.
