Manchegan Gachamigas Recipe

Ingredients to make Manchego Gachamigas:

  • 300 grams of pork jowl
  • 3 tablespoons pea or buckwheat flour
  • 2 tablespoons of cornmeal
  • 2 cloves of garlic
  • 100 grams of old bread
  • 1 deciliter of oil, olive with 2 degrees of acidity or more
  • 1 level tablespoon of paprika
  • A few peppercorns
  • 2 spice cloves
  • A few grains of caraway
  • Salt

How to make Gachamigas from La Mancha:

Fry the crushed garlic with the knife blade, the jowl cut into pieces and the bread cut into small cubes. Once everything is fried, remove from the pan and reserve.

Pour the paprika and the pea flour into the fat that remains in the pan, stirring constantly, add a liter and a half of water, already lukewarm, and the cornmeal dissolved in a little water. Season with salt and crushed spices, cook for half an hour, finally add the ingredients that we had fried and reserved, when it breaks the boil, and serve.
