Malagüeña Almond Soup Recipe

Ingredients to make Malagüeña almond soup:

  • 200 grams of almonds
  • 200 grams of garlic
  • 50 grams parsley
  • 100 grams of bread
  • saffron
  • oil
  • Salt

How to make Malagüeña almond soup:

  1. The bread is crumbled (it must be from the town, settled), fried and placed in the mortar.
  2. In the same oil, fry some peeled almonds, garlic and parsley. They are added to the fried bread and everything is mashed with patience and rhythm, adding a few strands of saffron.
  3. In a saucepan with water, pour the mashed together with the remaining oil and let it boil for a few minutes.
  4. At the time of serving, a few squares of fried bread are thrown into the soup.
