Ingredients to make Malaga Salad:

  1. 2 potatoes
  2. 1 orange
  3. 2 eggs
  4. 1 spring onion
  5. 150 grams of code
  6. 1 handful of black olives
  7. 1 splash of olive oil
  8. 1 splash of vinegar
  9. 1 pinch of salt
  10. 1 pinch of chives (optional)

How to make Malaga Salad:

  • If you have bought the salted cod, before starting the recipe you will have to desalt it. Thus, put the cod to soak and leave it for about 24 hours covered with water in the fridge. You will have to change the water 2-3 times. It must be left with a point of salt so that it adds that touch to the dish and the Malaga salad is perfect. The time needed to desalt cod can vary depending on the thickness of the fish. You can also buy crumbled that is desalted before.
  • Cook the whole potatoes with skin in a saucepan, so that they are completely covered with water. When they are cooked, remove them and let them cool down to peel them better.
  • On the other hand, heat another saucepan with water over high heat. When it starts to boil, cook the eggs over medium heat. When the water boils again, count 10 minutes of cooking, remove them, let them cool and peel them.
  • Put the desalted cod in a saucepan with a little hot water and cook it for a few minutes. When it is, take it out and reserve.
  • Cut the potatoes into small pieces, chop the eggs and mix both ingredients in a salad bowl or the source that you are going to use to serve the Malaga cod salad.
  • Chop the spring onion and add it on top of the salad.
  • Peel the orange, remove the white part and cut it into thin slices or pieces. Distribute the fruit over the salad and add the black olives.
  • Once the cod is cooked, remove the skin and bones and crumble or cut it into pieces. Add the fish to the salad being careful not to break it too much.
  • Now that you have all the ingredients for the Malaga salad ready, prepare the dressing. To do this, mix the oil, vinegar and salt in a small bowl, beat well to emulsify the oil and dress the salad with this preparation. Finely chop the chives and add it to the salad, along with a little pepper. Serve it very cold!
