Ingredients to make Pisto Malaga:
• 1 eggplant
• 1 medium zucchini
• 1 medium onion
• 1 red bell pepper
• 1 green bell pepper
• 1kg of tomato
• Oil
• Salt
How to make Pisto Malaga:
The aubergine and courgette are peeled and chopped into squares and put in salted water for a while. Fry slowly until soft and drain, reserving the oil.
We chop the onion and the peppers and fry them in the same oil, strain them and in this oil we fry the tomatoes with the skin. When the tomato is already fried, it is passed through the Chinese and this is added to all of the above together with a little salt.
