Majorcan style grouper with garlic

Ingredients to make Mallorca style grouper with garlic:

  • 4 grouper fillets of 250 grams
  • 1 onion
  • 1 green pepper
  • 2 garlic cloves
  • 1 natural tomato
  • 1 glass of white wine
  • 50 grams of sultanas
  • 20 grams of peeled pine nuts
  • 1 deciliter of olive oil
  • Salt

How to make Garlic Mallorcan Grouper:

  1. Peel the onions and garlic. Cut the onions, green pepper, garlic and tomatoes into very small squares (brounoise cut). Heat the olive oil in a frying pan.
  2. We cooked the grouper fillets back and forth in that pan and then transferred the lightly salted fillets to a baking sheet.
  3. In the same oil where we have fried the fish, sauté the onions, green peppers, garlic and tomatoes and when they are cooked add the sultanas and the peeled pine nuts. .
  4. We put the fish tray in the oven together with the sautéed vegetables on top of the fish fillets and water everything with a glass of white wine. We roast in the preheated oven at 180 degrees for 10 minutes. Once roasted, we present with a little finely chopped saffron and sprinkled on top to give it a bit of aroma. At the same time, pour all the sauce over the fish and spread on top, as a traditional touch, the sauce with the pine nuts and raisins.
