Ingredients to make Majorcan Empanadas:
• 1 chicken breast cut into medium pieces
• 1 dessert spoonful of sobrasada (full spoonful)
• 1 package of bacon strips or (four slices cut)
• 1 small can of cooked peas
• 1 dessert spoon of paprika de la Vera or normal
• 1 splash of extra virgin olive oil
• 300 grams of common wheat flour
• 1 glass of plain water
• 5 tablespoons of extra virgin olive oil
• 2 dessert spoons of lard
• 2 pinches of salt
How to make Majorcan empanadas:
Prepare a container in which you can work the dough. Add the flour, softened butter, water, oil and a pinch of salt. Knead in the bowl for 10 minutes until the dough is smooth and you can work it without sticking to your hands.
Once the dough for the Majorcan chicken empanadas is made, form a ball and cover with a clean kitchen cloth, take it to a cold and draught-free place. Turn on the oven at 200 ºC with both resistances. Cut the breast into cubes that are not too large, and the bacon into strips if it is not cut yet. Pour the peas, the bacon, the breast and the heaping tablespoon of sobrassada into a bowl. Season with salt and pepper and finally add a splash of oil. Stir gently to avoid crushing the peas. Remove the dough from the Majorcan empanadas to work it a little and form an elongated dough. Cut into four units to form four empanadas of a good size. For each piece you will form the base of the empanada, forming like a small jewelry box and, from that piece, you will also take out a smaller piece that will serve as a lid.
Make a ball and flatten with your hands. If you notice that it sticks to your hands, rub them a little with oil. Shape into a round shape and fill with a tablespoon of the mixed filling. Lift the edges up and place the smallest piece of dough on top. Join the edges of both pieces so that it is completely closed and give it a zigzag or braided shape. Prepare the baking tray and spread a parchment paper on it. Arrange your Majorcan pea and chicken empanadas, make small holes in the surface with a fork and bake at medium height. Bake for 50 minutes, monitoring the temperature of your oven in case it needs to drop below 200 ºC.
