Majorcan Baked Grouper Recipe

Ingredients to make Baked Grouper Majorcan style:

  • 4 grouper fillets of two hundred grams each, clean of skin and bones
  • 4 tablespoons of oil
  • A bunch of clean and finely chopped stir-fries
  • 3 garlic cloves, peeled and cut very small
  • 3 parsley sprigs, stemmed, cleaned and finely chopped
  • 50 gr of Málaga raisins without stems and without seeds
  • 30 gr of shelled pine nuts
  • salted
  • 1 pinch of ground black pepper
  • 1/2 tablespoon of sweet paprika and a tablespoon of Pernod

How to make Mallorcan baked grouper:

  1. In a roasting pan in proportion to this amount of material, pour all the raw ingredients, except the Pernod.
  2. Remove, without squeezing it.
  3. Place it so that half of the fabric is under the fish and the other half is on top.
  4. Pour 1/2 glass of hot water and place in the hot oven. The oven should not be too strong.
  5. Allow to cook for thirty to forty minutes.
  6. From time to time, with a spoon, water the fish with its own juice.
  7. When taking it out of the oven spread the spoonful of Pernod on top and serve hot.
  8. Note: This dish also allows us to add a thick peeled and cut potato mattress, and instead of half a ford of water, make it a whole one.
