Majadito Recipe

From the departments of Beni and Santa Cruz, we bring this typical Bolivian dish. Although its ingredients are simple, their combination makes this dish an explosion of incredible flavors. Quick and easy to prepare, in a few minutes you will be enjoying this popular and delicious Bolivian majadito or smoothie majadito.

Ingredients to make Majadito:

  • 500 grams of jerky
  • 2 cups of rice
  • 1 green bell pepper
  • 1 garlic
  • 1 red bell pepper
  • 1 onion
  • 1 pinch of salt
  • 1 pinch of pepper
  • 4 eggs
  • 4 bananas

How to make Majadito:

  1. Boil the charque in a pot with water until it is tender.
  2.  For those who are not familiar with this product, charque, also known as charqui, is dehydrated meat, generally beef. It can be substituted for chicken, duck, turkey… Charque is widely used in the Andean region of all of South America and began as a way to preserve meat for long periods of time.
  3.  Currently, it is used for all kinds of preparations, such as tamales, stews, empanadas…
  4. When the charque is ready, strain the meat and reserve the liquid for later. Unravel the charque and sauté it in a pan with a little hot oil.
  5. Cut all vegetables into small cubes.
  6. In a pot, add a little oil and sauté the chopped vegetables when hot.
  7. First add the garlic and onion and then, when the onion is translucent, add the peppers. Add salt and pepper to taste.
  8. Trick: The traditional majadito is usually orange in color, which is obtained by sautéing urucú (achiote) seeds.
  9. If you use them, you will need to sauté them first and remove them to sauté the vegetables.
  10. When the vegetables are all tender, add the rice and sauté for a few minutes. In this way, the majadito is much tastier.
  11. Pour the water you had reserved from cooking the jerky. In general, to cook rice correctly, two parts of water should be added for each part of rice.
  12. Tip: If you don’t have enough of the charque cooking water, you can add a little broth or water.
  13. Let the ingredients integrate a little and, immediately afterwards, add the jerky. Mix and let the majadito de charque cook for approximately 18 minutes.
  14. After this time, cover the pot and leave it for 2 more minutes on the heat so that the rice absorbs the liquid and all the flavors are integrated.
  15. While the rice is cooking, prepare the other part of the majadito, the plantain.
  16. To do this, peel the bananas, cut them in half lengthwise and cook them fried in a pan with very hot oil.
  17. You can also grill them, but they should be very golden.
  18. Finally, cook the fried eggs to crown the Bolivian majadito recipe. If you prefer, you can cook the eggs on the grill.
  19. To assemble the dish, place the rice with the jerky and the vegetables on the base, place a half of a banana on each side and, on top, a fried egg.
  20. Clever! You already have your Bolivian majadito recipe ready to serve. This majadito of meat is really delicious and can be made with different types of meat.
