Maimones Soup Recipe

Ingredients to make Maimones soup:

  • A loaf of bread
  • 500g of clams
  • a ripe tomato
  • a green bell pepper
  • Olive oil
  • A cube of chicken or fish broth
  • half a head of garlic
  • Parsley
  • Food coloring

How to make maimones soup:

  1. Put on the fire, a medium pot of water, add the tomato, the pepper and the garlic, all very finely chopped. When it starts to boil, add a splash of oil, the parsley and the stock cube and the food coloring.
  2. When everything is very well cooked, add the clams, they must be very clean of dirt, having left them, a while before, thrown in water and salt.
  3. Fry the bread, add to the pot, leave for a minute and remove from the heat.
  4. Salt to taste.
