Madrid Stew Recipe

Ingredients to make Coccid Madrilène:

  • For 2 persons:
  • 750 grams garbanzo beans
  • 750 grams beef shank
  • 600 grams chicken
  • 200 grams bacon
  • 100 grams ham in a piece
  • 200 grams cane bone
  • 2 u. chorizo
  • 2 u. onion blood sausage
  • 600 grams cabbage
  • 6 u. carrots
  • 6 u. medium potatoes
  • 300 grams green beans
  • 1pc onions
  • 2 u. nails
  • 2 u. garlic cloves
  • oil
  • 100 grams noodles
  • Toilet
  • FOR THE FILLING:
  • 200 grams white breadcrumbs
  • 3 u. eggs
  • 1 tablespoon chopped parsley
  • 2 u. minced garlic cloves
  • 1/2 dl stew broth
  • oil for frying

How to make Coccid Madrilène:

  1. 1 preparation let the chickpeas soak in warm salted water for at least 12 hours.
  2. Place the black pudding, the ham, the washed bones, the bacon and the chicken in a pot
  3. Cover with water and take it to the fire.
  4. When it starts to boil, remove the foam and introduce the chickpeas (better inside a grid), as well as the onion and the cloves.
  5. Let cook for 1 hour.
  6. After this time, add the hen.
  7. An hour later, add the peeled and whole carrots and potatoes, and continue cooking slowly
  8. Remove a little of the stew broth and cook the chorizos and blood sausages in it.
  9. Separately, cook the cabbage and the beans, and sauté everything with the minced garlic and oil.
  10. 2 for the filling Mix all the ingredients for the filling with the chopped ham and make balls
  11. Fry them in hot oil. Reserve them.
  12. 3 Finishing the dish when there are 15 minutes left before the cooked meat is tender; add the balls that we had reserved.
  13. Drain the broth and prepare a noodle soup with the pasta.
  14. 4 presentation Serve the soup first and then the meat with the chickpeas and vegetables.
  15. Meat, chickpeas and vegetables can be sprinkled with virgin olive oil.
  16. Some people prefer to accompany everything with a little homemade tomato sauce.
