Ingredients to make Macaroni with fish sauce:
- half a kilo of penne
- half a kilo of peeled prawns
- 350g white fish
- 250 grams scallops
- 150 grams smoked salmon
- chicken soup
- 30 grams butter
- 1 onion
- 1 clove garlic
- 250 grams liquid cream
- juice of half a lemon
- 2 yolks
- basil
How to make Macaroni with Fish Sauce:
- Chop the fish and remove the bones. Clean the scallops and cut the salmon into strips. Bring half a liter of chicken broth to a boil and add the prawns, simmer for 1 minute.
- Remove from the heat and repeat the operation with the fish and then with the scallops, keeping the brother on one side and the fish on the other.
- Sauté the chopped garlic and onion in the butter, add to these the cream, broth and lemon juice, bring to a boil, and boil for 5 minutes over medium heat until the sauce is reduced by half.
- Cook the pasta separately and drain, add the fish and salmon, to the sauce, and bring to the boil again, removing it and adding the egg yolks and basil, and stir, serve the seasoned pasta with the sauce.
