The chistorra is a sausage of Spanish origin normally made with fresh pork, aromatic herbs, garlic, salt and paprika, the latter giving it its characteristic color. Normally, chistorra is eaten roasted or fried and as a complement to different dishes, as on this occasion, since the main ingredient in this preparation is pasta. In this case, we have opted for macaroni, widely consumed pasta that older children love.

  1. 300 grams of macaroni
  2. 150 grams of chistorra
  3. 1 onion
  4. 2 tablespoons olive oil
  5. 500 grams of fried tomato
  6. 2 tablespoons dried oregano
  7. 1 pinch of salt

How to make Macaroni with chistorra:

  • To make the macaroni with chistorra recipe, you must first cook the macaroni. To do this, put a saucepan with water and a little salt on the fire. Once it starts to boil, add the macaroni and cook according to the manufacturer’s recommendation, usually between 9-11 minutes. Stir occasionally so it doesn’t stick to the bottom.
  • While the macaroni is cooking, chop the chistorra, peel and chop the onion.
  • Pour two tablespoons of olive oil over the heat in a wide skillet and, when the oil is very hot, add the chistorra and fryfor 1 or 2 minutes so that the oil takes on the flavor of the chistorra and leaves its reddish color in it. Remove the chistorra with the help of kitchen tongs and place it on a plate with absorbent kitchen paper.
  • In the same oil that you have fried the chistorra, add the chopped onion and fry over low heat until golden.
  • When the onion is well poached, add the fried tomato, the 2 tablespoons of oregano and the chistorra that you had set aside. Stir and cook for 5 minutes over low heat, stirring occasionally. The macaroni sauce with chistorra will thin out a bit and take on the flavor of the chistorra.
  • When the macaroni is cooked, remove from the heat and strain to remove the water. Next, add the macaroni in the tomato, oregano and chistorra sauce. Stir well so that the macaroni in sauce is well impregnated, turn off the heat.
