Ingredients to make Macaroni with bay leaf sauce:

  1. 250 grams of macaroni
  2. 4 tomatoes
  3. 80 grams of onion
  4. 2 garlic cloves
  5. 2 bay leaves
  6. 150 grams of Parmesan cheese
  7. 1 splash of olive oil
  8. 1 pinch of salt
  9. 1 pinch of Pepper

How to make Macaroni with Bay Sauce:

  • Before making the macaroni in red sauce, the first step is to get all the ingredients ready.
  • Tip: If you don’t have macaroni, you can use any other type of short pasta.
  • For the bay sauce, blend the tomato with the peel for a few seconds so that they are not completely crushed.
  • Separately, in a frying pan with oil, fry the finely chopped onion and garlic until golden. Add salt and pepper to taste.
  • It is time to add the crushed tomato and cook the red sauce over low heat until it boils.
  • Add the bay leaves and simmer, covered, for 20 minutes. If you consider it necessary, rectify the flavor with salt and pepper.
  • Tip: If the sauce is a bit acidic, add sugar to regulate the flavor.
  • Separately, in a pot with boiling water and salt, add the macaroni and cook until al dente.
  • Tip: In this recipe I used mini macaroni, but remember that any type of short pasta is perfect.
  • Finally, serve the macaroni and over them the bay leaf sauce, sprinkle some Parmesan cheese. In this case I accompanied the pasta dish with avocado, since being such a fresh dish it works very well.
