First of all, I will tell you that this dish that I am going to expose today comes from the entire Valencia Community throughout each town, only that in each town they prepare it in a different way. In this recipe I will provide the ingredients that I usually use to prepare the Alicante Lolita, since there are people who add or remove ingredients, but in general it is done this way. Ingredients to make Lolita Alicante:
- pork rib
- 1 package of white beans
- 1 handful of lentils
- 1 black pudding
- Chard
- 2 carrots
- Celery or thistle, according to taste
- Leek
- Turmeric (root or powder)
- 1 onion
- Garlic
- fried tomato sauce
- Nora
- Paprika
- Turnip
- salt and white pepper
How to make Lolita Alicante:
- We gather all the ingredients that we are going to use for this exquisite pot of meat and vegetables from Alicante.
- Wash, peel and dice all the vegetables. We reserve and continue with the recipe for Alicante Lolita.
- Meanwhile, we put the white beans to boil over low heat for three quarters of an hour trying not to stir with anything, we simply shake the pot so that they cook and from time to time frighten them. It is time to say that you add two fingers of water so that they continue to cook slowly and soften without falling apart.
- That said, while the beans are cooking, we chop the rest of the vegetables that we are going to fry, such as garlic, onion and celery. If the turmeric root is added to the pot from Alicante, it is also cut into very small pieces. We also chop the leek and fry all this very little for about 10 minutes over low heat. Finally, when it is ready, add the tomato and stir. If the tomato is not fried, it is added at the same time with everything that is being sautéed.
- After the cooking time of the white beans or kidney beans, add some lentils, say approximately a handful, a black pudding and the rib in pieces. We continue cooking everything, and when 10 minutes have passed, we add the sautéed vegetables, leave about 5 more minutes and finally add the rest of the vegetables that we have previously diced (see the photo above). Obviously, we let it cook over a very low heat for half an hour.
- Cooked all this during the regulation time, I finally introduce the Swiss chard to the Alicante vegetable pot. I do not say quantity because each person has the measure of it, as with the rest of the previous ingredients. I put a bag of chard because when they cook they come to nothing here, I love vegetables…
- Now we cover and let cook for approximately 10 more minutes, adding salt and pepper to taste, although that is already optional for each one. And it is over! I recommend this meticulous but exquisite dish of Alicante Lolita, it is worth it for cold winter days.
