Loin and vegetable toast recipe

We could say that toast is a type of sandwich, but the thing about toast is that only one slice of bread is used. Ingredients to make Loin and Vegetable Toast:

  • 2 slices of country bread
  • 4 pork loin fillets
  • 80 grams of red pepper
  • 80 grams of green pepper
  • 80 grams of cherry tomatoes
  • 80 grams of Eggplant
  • 80 grams of Zucchini
  • 10 arugula leaves
  • 20 grams of Parmesan cheese in flakes
  • ½ small glass of olive oil
  • 1 pinch of ground black pepper
  • ½ teaspoon of salt

How to make Loin and Vegetable Toast:

To make our easy gourmet canapés, the first thing to do is chop all the vegetables into small squares. Everything except the cherry tomatoes, which we will only cut in half.

Heat a frying pan with a little oil and brown all the vegetables over low heat until they are done and very soft. Next, season the loin with salt and pepper to taste and cook it on the grill using another pan. When it is golden on both sides, remove, cut into strips and add them to the pan with the vegetables. Finally, we toast the two slices of bread and proceed to assemble our loin toasts. To do this, we cover each piece of bread with the sautéed loin and vegetables, place the arugula leaves on top and finish with the Parmesan cheese flakes.

To make toast you can use the typical village bread or the typical fluffy homemade bread, with enough crumbs. This type of loin and vegetable toast is an ideal appetizer to serve at a gathering with friends while you drink a cold beer.
