Light Rice Recipe

Ingredients to make Clarico Rice:

  • for 4 people
  • 1 medium turnip
  • 4 stalks of chard
  • 4 artichokes
  • 4 garlic
  • 50 gr. of lentils
  • 50 gr. of white beans
  • 300 gr. of rice
  • Salt
  • Saffron (or coloring)

How to make Light Rice:

  1. Put the beans and lentils to soak the night before. Clean the vegetables well and chop them.
  2. Boil the vegetables and legumes in 3/4l of water for half an hour without letting them boil very hard.
  3. When you see that they are softening, fry the chopped garlic in olive oil and add it to the stew.
  4. After turning it around with the ladle, bring it to the point of salt and add the crushed and dissolved saffron with some of the broth from the pot.
  5. Now you need to cook the rice, for which you will have to calculate that the amount of broth in the pot is approximately a little more than a liter (better a liter and a half).
  6. Here the rice will consume a lot and the stew should be soupy.
  7. Once the rice is in the pot, take care to stir the stew gently during the first boils, so that the grains are well released.
  8. Safe cooking times for round grain rice are: 10 min high heat 2 min low heat 3 min off-pot covered 2 min pot uncovered and on to the plates.
  9. In the Vega Baja del Segura they like to sprinkle a splash of lemon on top that is left to the taste of the diner.
