Light Chickpea Salad Recipe

Ingredients to make Light Chickpea Salad:

  • ½ unit of purple lettuce
  • ½ piece of purple onion
  • 1 piece of tomato
  • 50 grams of cooked chickpeas
  • 1 piece of Lemon
  • 1 tablespoon curly parsley
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 jet of olive oil

How to make Light Chickpea Salad:

Get all the ingredients ready to make the low-calorie chickpea salad. When you have everything ready, cut the tomato into quarters and remove the seeds. Then, chop it into helmets as seen in the photograph and reserve. If you want you can cut the tomato into cubes to make the cold chickpea salad.

Separately, cut the onion into thin julienne strips, and squeeze the lemon to extract all its juice. Take a container, place the cut onion and pour the lemon juice over it, so it will marinate and give a special flavor to the light chickpea salad.

Then wash the lettuce leaves very well and chop them by hand. The size of the pieces is to taste.

Apart, wash and chop the parsley to add it to the container where you have the onion. Add salt and pepper to taste and mix everything well. This will be the dressing for the canned chickpea salad.

Now that you have everything, the time has come to assemble the cold and light salad.  Take a bowl and place a bed of lettuce, then add the cooked chickpeas, the tomato hulls and the onion. Pour the lemon juice with the chopped parsley over the light chickpea salad as a dressing.
