Lettuce is an herbaceous plant, it is normally consumed raw in many types of salads but it is ideal to consume it in a soup as in this case. Lettuce provides benefits to the body, one of the most important is that it helps to fall asleep. It is also purifying, that is, it helps to cleanse our body.

Ingredients to make Lettuce Soup:

  • 2 cups of lettuce
  • 1 unit of medium white onion
  • 1 unit of medium potato
  • 3 garlic cloves
  • 1 teaspoon fresh ginger
  • 2 bay leaves
  • 1 cup of cream (200 milliliters)
  • 30 milliliters of olive oil
  • 1 pinch of salt
  • 1 pinch of pepper

How to make Lettuce Soup:

  1. Before making this purifying recipe, the first step is to get all the ingredients ready.
  2. In a pot with boiling salted water, add the lettuce leaves and cook for 2 minutes. It is important to respect the time, otherwise they lose the color necessary for the soup.
  3. As soon as they are ready, drain the lettuce leaves, add them to a bowl with water and ice, leave for a minute, drain very well and reserve.
  4. Separately, to continue with the preparation of the lettuce soup, in a pot with olive oil, fry the onion, garlic and ginger cut into small cubes. When the onion is translucent, add the potato and bay leaves, mix very well.
  5. It is time to add a cup and a half of water or vegetable broth, cover and cook for 25 minutes over low heat.
  6. After this time, blend the soup (removing the bay leaves) with the lettuce. When a homogeneous mixture is obtained, add the milk cream, salt and pepper, blend again for 3 more minutes.
