Lettuce Gazpacho with Cucumbers Recipe

Ingredients to make Lettuce Gazpacho with Cucumbers:

  • 1 lettuce
  • 2 natural yogurts
  • 3 pickled cucumbers
  • 2 hardboiled eggs
  • 1 glass of very cold water
  • 100 grams of breadcrumbs
  • 2 tablespoons balsamic vinegar
  • 6 tablespoons olive oil
  • Salt
  • Pepper

How to make Lettuce Gazpacho with Cucumbers:

  1. Soak the breadcrumbs in very cold water.
  2. Place all the ingredients (lettuce, yoghurt, pickles, boiled egg) in the blender jug ​​with the glass of water and the breadcrumbs and blend them until they form a homogeneous cream.
  3. Season with salt and pepper and dress with a splash of oil and a few drops of vinegar.
  4. Season with salt and chill in the refrigerator for 30 minutes before serving.
