Lettuce Fritters Recipe

  • 3 lettuce hearts
  • 1 egg
  • 3 tablespoons of chickpea flour
  • 1 clove garlic
  • 1 pinch of parsley, salt and pepper
  • 1 teaspoon baking powder
  • 2 glasses of sunflower oil

How to make lettuce fritters:

Wash and cut the lettuce hearts, removing the trunk from the base and let them drain. Reserve them while you prepare the next step.

In the blender or the glass of an electric hand mixer, add the egg, the garlic clove, salt, pepper, parsley and also the lettuce. Beat vigorously for a couple of minutes and, finally, add the flour and yeast to beat again for another minute. Prepare a deep frying pan with the hot oil.

Trick: To make gluten-free lettuce fritters, use chickpea flour.

The result should be a thick paste, if not, add more flour, but not more than half a tablespoon, since it should be a pasty dough that is liquid. Then, with the help of a tablespoon, take a little of this dough and carefully pour it into the very hot oil to make the fried lettuce fritters. Let them fry for 2 minutes on each side.

To make the baked lettuce fritters, you simply distribute portions of the dough on a tray lined with parchment paper and bake at 180ºC for 20-25 minutes, depending on the size.
