The lettuce, carrot and beet salad that we present to you is perfect to serve on Christmas Eve, since we will season it with vinaigrette that will give it a different, exquisite and ideal touch of flavor for the date. Ingredients to make Lettuce, Carrot and Beet Salad:

  • 1 piece of lettuce
  • 3 pieces of Beet
  • 2 pieces of Jicama
  • 3 pieces of apple
  • 2 pieces of Orange
  • ½ cup of peanut
  • 50 grams of Piloncillo
  • 2 dessert spoons of olive oil
  • 2 dessert spoons of apple cider vinegar
  • 1 piece of clove
  • 1 pinch of salt
  • 1 pinch of pepper

How to make Lettuce, Carrot and Beet Salad:

In the following image you can see the ingredients that we will need to prepare this delicious lettuce, carrot and beet salad.

We are going to start the preparation of the recipe by cooking the beets. To do this, we put water to boil over high heat and, once it reaches a boil, add the beets with the skin, along with the piloncillo and the clove. Let it cook for approximately 35 minutes.

On the other hand, to continue with the Christmas beet salad, we slice the lettuce, we disinfect it in a container with water for approximately 5 minutes and, once ready, we drain it and reserve it for a moment.

Meanwhile, we peel the oranges perfectly well and separate them into segments. Once ready, we reserve them for a moment to continue with the beet and lettuce salad.

Now, we take the jicama, wash it very well, peel it and begin to chop it into small cubes of approximately 1 cm on each side. Once ready, we reserve it.

Then, we take the apple and, in the same way, we begin to chop it into small cubes of 1 cm on each side. In this way, we will obtain a really delicious and very nutritious beet and apple salad.

On the other hand, to make the vinaigrette for this Christmas beet salad, we take the olive oil, apple cider vinegar, salt and pepper and mix everything together.

Once the beet is ready, we remove it from the water, peel it very well and begin to slice it finely, as shown in the following photograph. Light salads are always a good option to serve during the Christmas menu or even once this long-awaited season has passed, since they have few calories and many essential vitamins and minerals for the body.

Tip: We reserve the cooking water for the next step.

Now, we integrate all the fruit and vegetables, we bathe the mixture with the vinaigrette that we formed a moment ago and, with a little of the beet cooking water, we integrate everything perfectly well. The Christmas beet salad is almost ready.
