Lentils with potatoes recipe

Preparing stewed lentils with potatoes has never been so easy recipe for lentils with potatoes. In this case, we have used some cooked lentils from a jar for its preparation but you can cook the legumes from scratch,  it will take you longer to make the recipe. In addition, also to save time we have cooked the potatoes separately but you can cook them directly in the stew if you prefer. Do not think about it anymore and encourage you to try this easy lentil recipe on those days when it is colder.

Ingredients to make Lentils with Potatoes:

  • 1 pot of cooked lentils
  • ½ can of crushed natural tomato
  • 1 Italian green pepper
  • ½ red bell pepper
  • ½ onion
  • 4 cloves of garlic
  • 1 teaspoon sweet paprika
  • 1 bay leaf
  • 4 potatoes
  • Water
  • Olive oil
  • Salt

How to make Lentils with Potatoes:

1. Peel and cut the potatoes into pieces and cook them in a pot with plenty of water and a pinch of salt for approximately 15 minutes (depending on the thickness of the pieces). This is the first step to making the recipe for lentils with potatoes.

2. While the potatoes are cooking, wash and cut the peppers into pieces, peel and cut the onion into eighths and peel the garlic, and grind everything in an electric blender or a blender. This will be the sauce of our stewed lentils with potatoes.

Trick: If you want to be able to chop all the vegetables instead of crushing them.

3. Next, we fry the crushed vegetables in a frying pan with a little oil so that they begin to poach.

4. When the sauce begins to brown, add the crushed natural tomato and fry it with the rest of the ingredients.

5. Once the lentils with potatoes have been fried, add the canned vegetables and a little water so that they begin to stew.

6. After about 5 minutes add the teaspoon of sweet paprika and continue cooking.

7. We add the drained potatoes directly from the pot with a slotted spoon so as not to add more water to the lentils stewed with potatoes. We remove well.

Tip: Instead of cooking the tuber separately, you can cook it directly in the lentil stew, but you will have to add more water and wait longer.

8. Finally, add the bay leaf, cover the lentils with potatoes and let them cook over low heat for about 10 more minutes.
