Lentils with pig’s ear recipe

Ingredients to make lentils with pig’s ear:

  • For 4 people:
  • 500 grams of lentils
  • 100 grams of fresh bacon
  • 100 grams of chorizo
  • 1 pig’s ear
  • 2 cloves of garlic
  • 1 spring onion
  • 1 carrot
  • Water
  • flour
  • I beat egg
  • Hojiblanca extra virgin olive oil

  • 1 sprig of thyme
  • 2 bay leaves peppers

 

How to make Lentils with Pork Ears:

1. Put the ear to cook in the pressure cooker with a pinch of salt. In 20 minutes it will be ready.

2. Put the lentils to soak the night before.

3.Put a little oil in a wide saucepan; add the whole cloves of garlic.

4. Finely chop the onion and carrot.

5. Add them to the pan along with the drained lentils, the bacon, and chorizo ​​cut into 4, the sprig of thyme, and 2 bay leaves.

6. Cover them with water, season them and cook for 20 minutes over medium heat.

7. Sprinkle with a little paprika and mix well.

8. Remove the ear from the pot, and chop it into strips (the parts that break, add them to the lentils).

9. Pass the ear strips in flour and beaten egg and fry them in a pan with oil.

10.Sprinkle them with a little paprika.

11.Serve the lentils in a vegetable dish and accompany the battered pig’s ear strips.

12.During cooking, the lentils must be completely covered with liquid to prevent the skin from drying out and coming off, raising it to the surface.
