These lentils with green beans, carrot, and curry that our friend Year has shared with an excellent dish to combat low temperatures and are super nutritious since it combines carbohydrates and high-quality vegetable proteins with the legumes and vegetables that appear in their ingredients. Try it without hesitation!

Ingredients to make Lentils with green beans, carrots, and curry:

  • 250g lentils
  • 100g green beans
  • 100g corvette
  • 1/2 onion
  • 1 ripe tomato
  • 1/2 red bell pepper
  • 1/2 carrot
  • 1 clove garlic
  • Parsley
  • Salt
  • Cumin
  • Curry

How to make Lentils with Green Beans, Carrots, and Curry:

1. First we chop the onion and the pepper very small and sauté in a pan. When it is golden, add the parsley, the minced garlic, the carrot, and the peeled and chopped tomato.

2. Then wash well and add the lentils, cover with water and let it cook for 5 minutes.

3. Add the beans and season with salt, cumin, and a teaspoon of curry.

4. When the curried lentils with vegetables have been cooking for about 15 minutes, add the clean and chopped zucchini and cook for 10 more minutes.

5. We serve the lentils with zucchini and freshly made curry. A few cups of cheese and strawberries would be a great dessert option for this dish of lentils with green beans, carrots, and curry.
