1. To start making our recipe for lentils with bacon and potatoes, the first step is to pre-list all the ingredients.
2. Remove the water where we had hydrated the lentils and add the lentils to a pot adding new water, bay leaves, and thyme to taste. Cook over medium heat until soft. Reserve the lentils.
3. Cut the tomatoes and onion very finely and set aside to make our recipe for lentils with bacon and potatoes.
4. Peel our potatoes and cut them into medium squares.
