The bacon is almost a required ingredient, but the ingredients can be chosen according to the taste of the members of the household: with red chorizo, beef, among other meats.
This recipe, in addition to being rich in nutrients such as iron and protein, is a typical dish consumed in cold seasons throughout Argentina, especially on national dates such as May 25. Ingredients to make Lentil Stew:
- 600 grams of lentils
- 150 grams of smoked bacon
- 200 grams of roast beef
- 2 chopped onions
- 2 chopped green onions
- 2 diced plum tomatoes
- 3 tablespoons of oil
- Hot water
- 2 large potatoes
- 1 red sausage
- 1 red pepper cut into cubes
- Salt
- Pepper
- ground chili
- 3 bay leaves
How to make Lentil Stew:
- Cut the red chorizo into slices and each slice into quarters. Place them in a pot with water over medium heat until it boils for 10 or 15 minutes, so they degrease. Drain the water and reserve the chorizo.
- Cut the bacon into cubes. First, brown the bacon in a pot over high heat. When it releases its fat, add the red chorizo that you had defatted. Once both ingredients are browned, remove them and reserve them.
- Cut the meat into cubes and put it in the pot with the cooking bottom that was left from the bacon and the chorizo. Turn the meat to seal it on all sides. Then remove it and reserve it.
- Put the chopped onions and green onions in the saucepan, along with the diced red pepper. Add a teaspoon of salt. Stir until onion is translucent.
- Add the diced tomatoes. Stir all vegetables about 3 minutes.
- Once the vegetables are soft, place the three meats that you had reserved: the bacon, the meat and the red chorizo. Stir everything very well.
- Tip: When you add the meat, you can add half a glass of wine and wait for the alcohol to evaporate.
- Then, place the potatoes cut into cubes. Stir well until everything is integrated. Add the seasonings, the salt, the pepper, the ground chili and stir very well.
- Add the lentils, previously soaked. Stir well.
- Tip: It is recommended that you soak the lentils for approximately 3 hours before using them.
- Add hot water until all the ingredients are covered and add 2 or 3 bay leaves, stir. Put the lid on the pot and let it cook over medium heat.
- Every once in a while, stir the preparation of the easy lentil stew and, if necessary, add more hot water so as not to stop cooking.
- Tip: Don’t overdo it with the water. You always have to cover the ingredients of the stew, but not too much.
- When you see that everything is cooked, turn off the heat and cover the pot. It is ideal that you let this traditional lentil stew rest for a few hours so that the flavors are more concentrated and it is tastier.
- Finally, serve the lentil stew with chorizo in casseroles. If you want, you can sprinkle chopped parsley on top.
