Lentil soup recipe with steamed vegetables

Ingredients to make Lentil Soup with Steamed Vegetables:

  • 300 grams of lentils
  • 1 leek
  • 1 carrot
  • 1 zucchini
  • 150 grams of pumpkin
  • 150 grams of broccoli
  • 100 gr of green beans
  • 4 tablespoons of liquid cream
  • Water
  • Hojiblanca extra virgin olive oil
  • Salt
  • a few sprigs of parsley

How to make Lentil Soup with Steamed Vegetables:

  1. Put water in the pressure cooker, add the lentils, the carrot, the leek and a bundle with the green part of the leek and a few sprigs of parsley.
  2. Season and put the lid on.
  3. Cook for 5 minutes from the moment steam begins to come out.
  4. When they are cooked, remove the bundle and blend the lentils with the carrot and leek with an electric mixer.
  5. Pass the soup through the Chinese, add the 4 tablespoons of cream and mix well.
  6. Chop the pumpkin, the zucchini into cubes.
  7. Clean the pods, remove the tips and threads and chop them into small 1-centimeter pieces.
  8. Separate the florets from the broccoli.
  9. Put everything in the specific accessory for steaming and season.
  10. Put a little water in the pressure cooker, attach the accessory to the vegetables, put the lid on and cook for 2-3 minutes from when the steam starts to come out.
  11. Serve the soup in the tureen and the vegetables seasoned with oil in a bowl.
  12. If you want to serve it as an appetizer, put some vegetables inside each glass and cover them with the soup.
