Thanks to the cooked legumes in a pot, the work is quite simplified and, in the blink of an eye, we will have this recipe for lentil salad with rice and egg ready. The result will be a rich, fresh and healthy dish that we will enjoy while we take care of our food or diet.

Ingredients to make Lentil Salad with Rice and Egg:

  • 1 can of lenses (400 g)
  • 50 grams of rice
  • 2 eggs
  • 1 grated carrot
  • 100 grams of bean sprouts
  • 2 roasted red peppers
  • 3 mini ears of corn
  • 2 cans of prickly pear
  • 1 grated celery
  • 1 splash of olive oil
  • 1 pinch of salt

How to make Lentil Salad with Rice and Egg:

Open the pot of lentils put them in a colander and washes them very well under running water to remove the remains of the liquid that preserves them. Let them drain. In a saucepan, heat water and, when it boils, add the rice. Stir occasionally until cooked.

On the other hand, prepare the boiled eggs. Put the eggs in a saucepan over the heat and cover them with water. When the water starts to boil, count 5 minutes and submerge them in cold water. Wait a few minutes before peeling them and setting them aside.

To make the cold lentil and rice salad, put the lentils and rice in a large salad bowl at room temperature.

Chop the boiled eggs and add them. Chop the roasted red pepper and add it to the carrot, bean sprouts and celery. Cut the corn on the cob into pieces and add them to the salad along with the drained tuna.

Tip: The quantities of the different vegetables are to taste, so you can add as much as you want.

Dress the fresh salad with olive oil and salt, mix well and put it in the fridge if you prefer to serve it cold.

Trick: In this case, we have not added vinegar because the pickles already have them, but you can dress the salad to your liking.

This summer salad can be served on any occasion, although it is ideal for the summer season, especially for the hottest days. Ready-to -eat!

Although in the basic recipe of this lentil salad we have not used seasonings or dressings, you can vary the preparation and make it to your liking. You can make this homemade dressing that will serve you for any savory recipe, be it salads or meats, or make homemade mustard vinaigrette.

If you want to finish the recipe quickly, you can simply decorate it with some coriander and mint leaves. Add a splash of lemon juice to complete and it’s ready. Perfect for diets and for a balanced diet!
