Ingredients to make Lentil Cream Soup:
- 2 tablespoons olive oil
- 4 onions, chopped (4 cups)
- 2 garlic cloves, minced
- 4 carrots, peeled and grated (3 cups)
- 3 celery stalks, chopped
- 1 cup dried lentils, cleaned and rinsed
- 2 cups of chicken broth
- 3 cups of water
- 200g of milk cream
- Salt and black pepper to taste
- To decorate:
- fresh celery leaves
How to make Lentil Cream Soup:
- In a large pot, heat the oil, add the onion, garlic, and carrots, and sauté for a few minutes.
- Add the celery, lentils, broth and water, and wait for it to come to a boil.
- Lower the heat to and let the soup continue to boil, cover and cook until the lentils are tender.
- Strain the soup and separate the broth, process or blend the food to a puree, place the puree in the pot and add the broth.
