We all know the importance of regularly consuming legumes. There are many ways to cook them, today the variety is almost infinite. From this article, we propose you to make them in a sweet version: a juicy and very tasty lentil cake that will surely surprise you, and no one would say once that it is made from lentils. In addition, this lentil sponge cake is suitable for those who are gluten intolerant. Do not miss this delicious lentil cake because it is totally worth it. Let’s go with the recipe.

Ingredients to make Lentil Cake:

  • 200 grams of lentils already cooked
  • 200 grams of panela (or brown sugar failing)
  • 1 tablespoon liquid vanilla
  • 75 milliliters of sunflower oil
  • 6 eggs
  • 50 grams of cornstarch
  • 2 tablespoons of pure unsweetened cocoa
  • 1 pinch of salt
  • 2 teaspoons of praline to decorate (optional)

How to make Lentil Cake:

  1. In a saucepan, place the panela sugar together with the lentils and the liquid vanilla and cook for 10 minutes once they have started to boil, stirring from time to time.
  2. Tip: If we are going to use potted lentils, rinse them under water and let them drain well.
  3. If we have cooked them at home, drain them anyway, so that the minimum amount of water remains
  4. We are going to let the lentil jam warm a little and crush it with an electric mixer.
  5. We add the sunflower oiland mix it well, this time, with some manual rods.
  6. Separate the whites from the yolks, reserve the whites and add the yolks to the mixture of lentil jam and oil. We mix well.
  7. Sift the cornstarch together with the cocoa powder while we mix on top of the lentil cake mixture.
  8. Whip the egg whites until stiff with a pinch of salt and add them to the mixture of the lentil tart little by little and with enveloping movements.
  9. Pour the lentil cake mixture into a round mold about 24 cm in diameter and level the surface.
  10. Sprinkle the surface with crocanti and bake the lentil cake in a preheated oven at 175ºC (165ºC with a fan) with heat up and down for about 25 minutes.
  11. Or until when inserting a toothpick in the center, it comes out without any remains of dough. Let the cake cool on a wire rack.
  12. If you have leftover lentil cake, you can keep it well wrapped in plastic wrap.
  13.  If you like you can prepare a little whipped cream for desserts or a chocolate ganache and decorate the cake to your liking.
