Ingredients to make Lentil and Coriander Soup:
- 400 grams of lentils soaked in water.
- 4 units of medium red tomatoes
- 2 slices of long onion or green onion
- 5 small potatoes
- 150 grams of fresh coriander
- Salt
- Pepper
How to make Lentil Cilantro Soup:
- To start making our lentil and cilantro soup, the first step is to pre-list all the ingredients.
- In a medium pot add the lentils with plenty of water as shown in the image, bring to medium-high heat
- Peel the potatoes and chop them into small squares, add them to the pot where we are making our lentil and coriander soup. Cook the lentils for approximately 20 minutes.
- Wash the onion and tomato, chop very finely to make a stew. Reserve.
- Bring a frying pan to medium heat, add a tablespoon of sunflower oil and fry the tomato and onion for approximately 4 to 5 minutes.
- Once our onion and tomato sauce is ready, add it to our lentil and coriander soup. Lower the heat.
- Remove a little of the broth from the soup and add it to a bowl. Add half the cilantro and process. Add the processed broth to the lentil soup with cilantro and leave it to cook for five more minutes. Turn off the heat.
