Lentil and cheese croquettes recipe

The lentil and cheese croquettes are a delicacy that you cannot miss. They are very easy to make and the flavor will surprise you, it is also a very original way of making children eat vegetables. Go ahead and follow the step-by-step recipe that we have for you for vegetarian lentil croquettes.

Ingredients to make Lentil and Cheese Croquettes:

  • 250 grams of Lentils
  • 1 teaspoon dried thyme
  • 150 grams of mozzarella cheese
  • 2 units of white onion
  • 1 teaspoon of garlic paste
  • 1 teaspoon dried oregano
  • 2 tablespoons of breadcrumbs
  • 1 pinch of salt and pepper

How to make Lentil and Cheese Croquettes:

1.To start making our recipe for lentil and cheese croquettes, our first step is to pre-list all the ingredients for its preparation. Remember that like most legumes, lentils should be soaked overnight.

2.Drain the soaking water from the lentils and place the beans in the pressure cooker. Add salt, some sprigs of thyme to flavor and cook over medium heat for about 15-20 minutes maximum, until soft. Remove and reserve.

3.In a bowl mix the lentils with the onion, salt, pepper and garlic paste to taste. In this way we will make the base dough to make the lentil croquettes. Process until all the ingredients are integrated.

4.Once you get the dough for the homemade croquettes, grate the cheese on top and add the oregano. Mix very well until these two ingredients are integrated again.

Remember that if you want the croquettes to be vegan, you can eliminate the cheese or replace it with tofu or vegan cheese.

5.Finally, add the breadcrumbs so that our homemade croquette dough compacts and does not fall apart when frying.

6.Take a frying pan with oil over medium heat and when it is hot, add portions of the lentil croquette dough with the help of a spoon. Let fry on each side until well browned. Remove to absorbent paper to remove excess fat.

Serve the lentil and cheese croquettes accompanied with the dressing that you like the most, I recommend you try it with the Indian yoghurt and mint sauce.
