Lemon squares recipe

Ingredients to make Lemon Squares:

  • 100 grams of butter
  • 1 grated lemon peel
  • 1 cup of sugar (200 grams)
  • 1½ cups of flour (210 grams)
  • For the filling
  • 4 eggs
  • 2 cups of sugar (400 grams)
  • 1 cup of corn starch (125 grams)
  • 2 teaspoons lemon zest
  • 1 cup lemon juice
  • icing sugar (optional)

How to make Lemon Squares:

  1. To begin, process the butter with the flour, the lemon zest and the sugar for a few minutes until you see that the mass of these exquisite lemon squares is formed.
  2. Once you have the dough, take it out of the processor or blender and compact it well.
  3. Wrap it in tightly closed plastic wrap and let it rest in the refrigerator for approximately 30 minutes.
