Ingredients to make Lemon Snow:

  • 3 cups of sugar (450 gr)
  • 5 liters of water
  • 2 cups of lemon juice (225 ml of lime juice)
  • 1 pinch of green food coloring (optional)

How to make Lemon Snow:

  1. Put the sugar in a large pot along with 3 liters of water. Cook over medium heat for 30 minutes. Let cool completely.
  2. Meanwhile, go squeezing the lemons(approximately eight) and obtaining their juice.
  3.  You have to get 225 ml or a little more if you like it with a stronger lemon flavor.
  4. In the pot where you have prepared the sugar and water syrup, add the lemon juice and the remaining two liters of water.
  5. If you like it to have color, this is the opportunity to add green food coloring, although you will have to put a lot of it if you want it to look very green.
  6. Pour into a rectangular tray, or several, until all the lemon snow fits. Store in the freezer until set, about four hours.
  7. At the time of serving, scrape the lemon snow with a scraper, you can also chop and crush with a blender to get the lemon snow.
  8. Once the snow has been removed, let it rest for five minutes so that it loses a bit of ice. And enjoy a refreshing lemon snow!
