Leek Stew Recipe

Ingredients to make Leek Stew:

  • 400g potatoes
  • 2 thick leeks
  • 2 eggs (or the egg white)
  • 3 tablespoons of butter
  • 4 slices of bread

How to make leek stew:

  1. Wash the leeks, cut first into four parts, lengthwise, and then into small pieces
  2. Peel and wash the potatoes that we cut into cubes.
  3. We cut the bread into small pieces.
  4. We melt the butter in a frying pan.
  5. We fry the bread.
  6. We remove and reserve.
  7. Pour 2 liters of water into a saucepan.
  8. Salt and add the potatoes and leeks.
  9. We cook for 30 minutes.
  10. Separate the whites from the raw yolks.
  11. Beat the yolks in a bowl and gradually add 1 tablespoon of the potato cooking liquid.
  12. Add to the pan, stirring with a rod or a mixer.
  13. We serve in a tureen and accompany with fried bread.
