Ingredients to make Leek Stew:
- 400g potatoes
- 2 thick leeks
- 2 eggs (or the egg white)
- 3 tablespoons of butter
- 4 slices of bread
How to make leek stew:
- Wash the leeks, cut first into four parts, lengthwise, and then into small pieces
- Peel and wash the potatoes that we cut into cubes.
- We cut the bread into small pieces.
- We melt the butter in a frying pan.
- We fry the bread.
- We remove and reserve.
- Pour 2 liters of water into a saucepan.
- Salt and add the potatoes and leeks.
- We cook for 30 minutes.
- Separate the whites from the raw yolks.
- Beat the yolks in a bowl and gradually add 1 tablespoon of the potato cooking liquid.
- Add to the pan, stirring with a rod or a mixer.
- We serve in a tureen and accompany with fried bread.
