Ingredients to make Leek Puff Pastry with Smoked Trout:
- 500 grams leek
- 2dl digging
- 100 grams mushroom
- 250 grams liquid cream
- 1 pc. onion
- 100 grams Butter
- 200 grams smoked trout
- 4 puff pastry sheets of 10 cm. sideways
- 1 bay leaf
- Nutmeg
- Salt
- Pepper
How to make Leek Puff Pastry with Smoked Trout:
Clean and cut the leeks and cook them. Sauté the chopped onion and the chopped mushrooms with the butter. Add the cava and reduce to 1/3 of its volume. Add the cream and reduce by half. Finally, add the leeks and leave on the fire for 5 more minutes. Season.

Bake the puff pastry at 200ºC, about 10 minutes. Open the puff pastry sheet in half, place the leeks and the trout on top, close with the other half and pour sauce.
